Tamarind Rice
(Another version. My preferred recipe)
Cook Rice. water measure 1: 1 1/2. ( 1 kg)
Cool on a plate.
Soak 2 lemon size of tamarind…make a thick puree ….say 2 cups.
Dry Roast – 6 red chillies, 1 1/2 tbsp daniya, 1 tbsp black pepper, 1 tbsp jeera, 1 tbsp channa dal, ( optional ) 2 tsp white sesame seeds, 1 / 2 tsp fenugreek. Make a powder.
Add 6 tbsp of til oil…
Add 2 tsp mustard,
1 1/ 2 tbsp urad dal ( broken )
1 1/2 tbsp channadal,
1 hand full of roasted peanuts..6 to 8 red chillies. ..3 sprigs of curry leaves 1/ 2 tsp of hing powder…..then pour tamarind puree. ..add 1tsp turmeric powder. ..salt 2 tsp…when it simmers add the prepared powder…when oil gives out …turn off
Tip: If the mix is too tight add little water for desired consistency. .
Gently mix with cooked rice
Sprinkle little til oil over rice before mixing…
