Vegetable Biryani


Rice- 2 cups wash and drain
Veg – carrot, peas, beans, potato, meal maker- 22 to 3 cups(Soak meal maker for sometime in water.)
Paste of 1 inch ginger and 4 green chillies
Mint and coriander leaves handful each
Turmeric 1 tsp
Red chilly powder 2 tsp
Oil-2 tbsp
Ghee – 1 tbsp
For tempering
6 Cloves, 3 cardamom, 1 star anise, 1 strand mace, 2 inches cinnamon, 2 to 3 Bay leaves
2 tsp cumin

In a cooker heat 2 tbsp oil, put tempering ingredients, fry for few seconds, add ginger chilli paste, fry for few seconds, add all the veg and meal maker. Fry for some time. Add Turmeric powder and chilli powder, fry for some time. Add chopped mint and coriander leaves. Fry for some time. Add rice mix and then add 4 to 4 1/2 cups of water. Add salt to taste. Finally add 1 tbsp of ghee and close the lid. Switch off after 2 whistles.
