Ridge gourd chutney

Skin from 4 ridge gourds
Few pieces of ridge gourd
Tamarind small gooseberry size
Jaggery to taste
Turmeric – 1/4 tsp
Salt to taste

2-3 tbsp oil
Fenugreek – 3/4 tsp
Black gram- 2 tsp
Mustard seeds-2 tsp
Green chillies – 3(slit)
Red chillies – 2-3
Asafoetida to taste

Heat a pan. Add oil. Once its hot add all the ingredients mentioned in tempering as per order given. Fry till cooked. Add the chopped skin and pieces of ridge gourd along with tamarind, turmeric and salt. Cook till soft. Add water if needed. Cook for sometime. Cool completely. Add to mixi jar. Add jaggery to taste. Grind it.
Ridge gourd chutney ready.

Kovakaya chutney is similarly made. In tempering add around 1 tsp of chana dal. Unlike the above it shouldn’t cook completely otherwise it will get mashed on grinding. This chutney tastes best when coarsely grinded.
