Tomatoes 600 gms
Green chillies 8 cut in small piece
Ginger 1 tbsp
Turmeric powder -1 tsp
Chilli Powder – 2 tsp
Garam masala powder -2 tsp (optional)
Mint leaves – 2 handful chopped finely
Coriander leaves – 4 tbsp finely chopped
Salt as needed
For the seasoning
Oil – 5 tbsp
Bay leaf -2
Cinnamon – 1 inch piece*3
Wash rice and keep aside.
Add oil in cooker and add ingredients under seasoning. Once fried,add curry leaves, green chillies, and ginger. Fry for some time.
Add mint and Coriander leaves. Fry for some time.
Now add chopped tomatoes,Turmeric and chilli powder and cook till mushy.
Add garam masala if needed. Add washed rice and water as per required and salt to taste.
Cook for 2 whistles.
Tomato rice is ready.
