Mint Rice 

Rice – 1 .5cup wash and soak for 15 minutes Mint- 1 kattu , take good leaves along with tender tips and grind with 2 green chilies, small ginger piece just adding little water.
Tomatoes-2

Take heavy bottom vessel with oil
When oil becomes hot add 2 cloves , 2 cinnamon sticks 2 cardamom 2 Tej patta then add tomatoes. You can add small pieces of carrots or boiled dry peas or fresh peas as per availability. Stir for some time then add grind paste of mint

Stir in medium flame till raw smell goes , oil comes out add rice with water 3 cups ( 1:2 ratio)

Let it cook , add salt just stir between , when almost water finished close the lid keep very low flame for 10 minutes and put the flame off. Wait for another 5 minutes to open .

Last you can also add fried paneer on top after opening the lid instead of carrots.
